Pat’s Pizza opened in the Spring of 1984. We started downstairs in the market square with a counter and a household oven. We had a wooden cash drawer that pinged when you opened it!
We couldn’t afford stools so the customers had to stand while they waited for the pizza to cook and that took a while in the domestic oven!
The Derry People and Donegal Newspaper office were above us and when we got our first Italian Stone based oven the editor used to come down with the sweat pouring off him to complain about the heat.
When they moved to another location in the town (not because of us) we expanded upstairs. In 1990, we moved Pat’s Pizza to the Main Street where we are still located today. We remained in the Market Square with a more bistro style establishment, Pat's On The Square, and it has been thriving ever since.
Our concept in Pat’s Pizza is to deliver top quality pizza, at reasonable prices, in an unpretentious and casual setting. Our pizza dough is freshly made every day using just 5 ingredients, 00 Italian flour, fresh yeast, water, olive oil and a little salt.
Our pizza sauce is also freshly made every day by our chefs in Pat's on the Square using just tomatoes, garlic, herbs, and a little salt and sugar. All ingredients are bought in fresh and prepared in our kitchen. We buy the best produce available and have excellent relationships with our suppliers, some of whom we have been dealing with for the past 30 years.

'The nation’s favourite pizza'
Pat’s Pizza in Letterkenny has been around since since 1984 and has a very loyal customer base. The “Pat” in the name is Pat Bradley, who runs the business, and another restaurant, Pat’s on the Square, with his wife Mary.
Alex O’Donnell has been in Australia for the past year and a half and has eaten pizza in many different places there – “and not one of them comes close to Pat’s”. “They have a lovely doughy base, they pile the toppings high, and although I’ve been eating there for 20 years I’m never disappointed,” says Edna Keeney.
“Every Friday my family and I would have a pizza night while watching Top of the Pops. I still get excited getting a Pat’s Pizza years later – I am now 22” , says Zara Vambeck.
